Apple Pancakes Recipe

Ingredients
  • 1 c all-purpose flour
  • 1/2 tsp salt
  • 1 tbsp molasses
  • 2 tsps baking soda
  • 1 tbsp margarine, melted
  • 1 tbsp honey
  • 2 c finely sliced Granny Smith apple
  • 2 eggs
  • 2 c low-fat buttermilk
  •  Dash of ground nutmeg
  • 2 tsps baking powder
  • 2 tsps lemon juice
  • 1 c whole-wheat flour
  • 1 tsp ground cinnamon
  •  Vegetable cooking spray

Directions
  • Step #1 Combine first 7 ingredients In a large-ish bowl; stir well.
  • Step #2 Combine buttermilk & next 5 ingredients (buttermilk through eggs) in a small bowl; stir well.
  • Step #3 Add to flour mixture, stirring until smooth.
  • Step #4 Fold in apple.
  • Step #5 Let stand 5 mins.
  • Step #6 Spoon about 1/4 c batter for each pancake onto a hot nonstick griddle or nonstick skillet coated with cooking spray.
  • Step #7 Turn pancakes when tops are covered with bubbles & edges look cooked.
