Apple Pancakes Recipe

Ingredients

1 c all-purpose flour
1/2 tsp salt
1 tbsp molasses
2 tsps baking soda
1 tbsp margarine, melted
1 tbsp honey
2 c finely sliced Granny Smith apple
2 eggs
2 c low-fat buttermilk
Dash of ground nutmeg
2 tsps baking powder
2 tsps lemon juice
1 c whole-wheat flour
1 tsp ground cinnamon
Vegetable cooking spray

Directions

Step #1 Combine first 7 ingredients In a large-ish bowl; stir well.
Step #2 Combine buttermilk & next 5 ingredients (buttermilk through eggs) in a small bowl; stir well.
Step #3 Add to flour mixture, stirring until smooth.
Step #4 Fold in apple.
Step #5 Let stand 5 mins.
Step #6 Spoon about 1/4 c batter for each pancake onto a hot nonstick griddle or nonstick skillet coated with cooking spray.
Step #7 Turn pancakes when tops are covered with bubbles & edges look cooked.
