Anthony's Home Fries Recipe

Ingredients
  • 1/2 medium green bell pepper, coarsely sliced
  • 1 medium onion, coarsely sliced
  •  Hot pepper sauce, for serving
  • 4 large Idaho potatoes, peeled & quartered
  • 2 tbsps unsalted butter
  • 1/2 medium red bell pepper, coarsely sliced
  •  Salt & freshly ground black pepper
  • 1 tbsp vegetable oil

Directions
  • Step #1 Bring a large saucepan of salted water to a boil.
  • Step #2 Add the potatoes & cook this until just tender, about 15 mins.
  • Step #3 Drain & coarsely chop the potatoes.
  • Step #4 In a large heavy skillet, preferably cast iron, melt 1 tbsp of the butter in the vegetable oil.
  • Step #5 Add the onion & red & green peppers & cook over moderately high heat, until wilted, stirring, about 4 mins.
  • Step #6 Mix in the potatoes & press into an even layer in the skillet.
  • Step #7 Cook over moderate heat until browned & crusty on the bottom, about 5 mins.
  • Step #8 Spice up with salt & pepper.
  • Step #9 Turn the potatoes, & cook this until well browned, adding the remaining 1 tbsp butter to the skillet as you turn, about 5 more mins.
  • Step #10 Spice up with salt & pepper & serve this with hot sauce.
