Ingredients
10 (3-inch) lemon verbena leaves
1 (750-milliliter) bottle Cava or other sparkling wine
6 c sliced peaches (about 2 lbs)
1/2 tsp minced lemon verbena leaves
1/2 c sugar
Directions
Step #1 Combine whole verbena leaves & sparkling wine In a large-ish saucepan; bring to a boil over med-heat/flame.
Step #2 Cook until reduced to 1 c (about 15 mins).
Step #3 Remove & discard the whole leaves.
Step #4 Add sugar, stirring until dissolved.
Step #5 Add sliced peaches; bring to a boil.
Step #6 Remove from heat.
Step #7 Cover up & chill in the fridge.
Step #8 Stir in minced verbena leaves just before serving.
