Cheese-stuffed French Toast With Strawberry Sauce Recipe

Ingredients
  •  Candied Lemon Rind
  • 2 1/2 c 1% low-fat milk
  • 1 (8-oz) tub reduced-fat cream cheese
  • 2 large eggs
  • 1/2 tsp vanilla extract
  • 1/3 c sugar
  • 12 (1-oz) diagonally cut slices French bread
  • 1/4 c sifted powdered sugar
  •  Strawberry Sauce
  • 4 large egg whites
  •  Cooking spray

Directions
  • Step #1 Cut a horizontal slit through bottom crust of each slice of bread to form a pocket.
  • Step #2 Combine powdered sugar & cream cheese; stir well.
  • Step #3 Spread mixture evenly into pockets of bread.
  • Step #4 Place 6 bread slices in each of two large, shallow baking dishes; set aside.
  • Step #5 Combine milk, egg whites, sugar, vanilla extract, & eggs in a bowl; beat well with a wire whisk.
  • Step #6 Pour milk mixture evenly over bread slices.
  • Step #7 Cover up & chill 1 hr or until liquid is absorbed.
  • Step #8 Coat a large nonstick skillet with cooking spray, & place over med-heat/flame until hot.
  • Step #9 Arrange half of bread slices in skillet, & cook 3 mins.
  • Step #10 Turn bread over, & cook 3 mins or until browned; remove this from skillet.
  • Step #11 Repeat procedure with the remaining bread slices.
  • Step #12 Serve with Strawberry Sauce, & garnish with Candied Lemon Rind.
