Crown Jewel Gelatin Pie Recipe

Ingredients
  • 1 (3 oz) package strawberry gelatin
  • 1 (3 oz) package lime gelatin
  • 2 (9 inch) graham cracker crust
  • 2 c cold water
  • 3 c boiling water, divided
  • 1/4 c sugar
  • 1 (3 oz) package raspberry gelatin
  • 1 c pineapple juice
  • 1 1/2 c heavy whipping cream
  • 1 (3 oz) package black cherry gelatin

Directions
  • Step #1 In a small bowl, dissolve raspberry gelatin in 1 c boiling water; stir in the 1/2 c cold water.
  • Step #2 Pour into a 9-in.
  • Step #3 x 5-in.
  • Step #4 x 3-in.
  • Step #5 loaf pan coated with nonstick cooking spray.
  • Step #6 Repeat with lime & black cherry gelatin, using two more loaf pans.
  • Step #7 Refrigerate until firm, about 2 hrs.
  • Step #8 Cut each into 1/2-in.
  • Step #9 cubes.
  • Step #10 In a saucepan, mix the pineapple juice & sugar.
  • Step #11 Bring to a boil.
  • Step #12 Add strawberry gelatin & stir until dissolved.
  • Step #13 Add remaining cold water.
  • Step #14 Transfer to large bowl.
  • Step #15 Refrigerate until thickened but not firm, about 1-1/4 hrs.
  • Step #16 In a chilled mixing bowl, beat cream until soft peaks form.
  • Step #17 Fold whipped cream into strawberry gelatin mixture.
  • Step #18 Gently stir in the cubed gelatin.
  • Step #19 Spoon mixture into crust.
  • Step #20 Refrigerate until firm, about 2 hrs.
