Step #1 Preheat oven to 400°.
Step #2 Place apple on paper towels; squeeze until barely moist.
Step #3 Lightly spoon flour into dry measuring c; level with a knife.
Step #4 Combine the flour & next 6 ingredients (flour through cinnamon) in a medium bowl; stir with a whisk.
Step #5 Make a well in center of mixture.
Step #6 Combine milk, vanilla, oil, yogurt, & egg; stir well with a whisk.
Step #7 Add to flour mixture, stirring just until moist.
Step #8 Stir in apple.
Step #9 Spoon batter into 12 muffin c coated with cooking spray.
Step #10 Bake at 400° for 20 mins or until muffins spring back when touched lightly in center.
Step #11 Remove muffins from pans as soon as possible; place on a wire rack.
