Fruited Breakfast Barley Recipe

Ingredients
  • 1/2 c raisins
  • 1 tsp salt
  • 1 1/4 c uncooked pearl barley
  • 5 c water
  • 1/2 c dried apricots, quartered
  • 1/3 c packed brown sugar
  • 1 c 1% low-fat milk
  • 1/2 c slivered almonds, toasted & coarsely sliced

Directions
  • Step #1 Place 1/3 c barley in a mixer; process until coarsely ground (about 15 to 20 seconds).
  • Step #2 Place ground barley In a large-ish saucepan.
  • Step #3 Repeat procedure with remaining barley.
  • Step #4 Cook barley over med-heat/flame 4 mins or until toasted, stirring frequently.
  • Step #5 Add water, sugar, & salt; bring to a boil.
  • Step #6 Reduce heat; simmer 25 mins or until barley is soft, stirring frequently.
  • Step #7 Add milk; cook 5 mins or until thick, stirring constantly.
  • Step #8 Stir in raisins, apricots, & almonds.
  • Step #9 Serve as soon as possible.
