Almond-buttermilk Hotcakes With Blackberry-grape Sauce Recipe

Ingredients
  •  Hotcakes:
  • 2 tbsps fresh lemon juice
  • 1 tsp baking soda
  • 1 large egg
  • 1 tsp cornstarch
  • 1 1/3 c nonfat buttermilk
  • 1/8 tsp salt
  • 1 tbsp water
  •  Sauce:
  • 1 1/4 tsps baking powder
  • 1 1/2 c all-purpose flour (about 6 3/4 oz)
  • 1/3 c water
  • 1/4 tsp grated lemon rind
  • 1/4 tsp freshly ground nutmeg
  • 1/4 c sliced almonds, toasted
  • 1 1/2 c fresh blackberries
  • 2 tbsps canola oil
  • 3 tbsps seedless blackberry jam
  • 1 c seedless red grapes, halved lengthwise
  •  Cooking spray
  • 1/2 c packed brown sugar

Directions
  • Step #1 To prepare sauce, mix the first 5 ingredients in a small saucepan over med-heat/flame, & stir with a whisk.
  • Step #2 Add grapes to pan; bring to a boil.
  • Step #3 Reduce heat, & let simmer 1 min or until slightly thickened.
  • Step #4 Stir in the blackberries.
  • Step #5 Remove from heat, & keep warm.
  • Step #6 To prepare hotcakes, lightly spoon flour into dry measuring c; level with a knife.
  • Step #7 Combine flour & next 5 ingredients (through salt) In a large-ish bowl, stirring with a whisk.
  • Step #8 Combine buttermilk & remaining ingredients except cooking spray; add to flour mixture, stirring until smooth.
  • Step #9 Pour about 1/4 c batter onto a hot nonstick griddle or nonstick skillet coated with cooking spray.
  • Step #10 Cook 2 mins or until tops are covered with bubbles & edges looked cooked.
  • Step #11 Carefully turn pancakes over; cook for 2 mins or until bottoms are lightly browned.
  • Step #12 Repeat procedure with remaining batter.
  • Step #13 Serve hotcakes with sauce.
