Cocoa-almond Biscotti Recipe

Ingredients
  • 2 large eggs
  • 1/4 tsp salt
  • 2 1/4 c all-purpose flour
  • 1/2 c butter or margarine, softened
  • 1 1/2 tbsps cocoa
  • 1 c sugar
  • 1 1/2 tsps baking powder
  • 1 (6-oz) can whole almonds (1 c)
  • 1 1/2 tbsps coffee liqueur*

Directions
  • Step #1 Combine butter & sugar In a large-ish bowl; beat at medium speed with an electric mixer until light & fluffy.
  • Step #2 Add eggs, beating well.
  • Step #3 Mix in liqueur.
  • Step #4 Combine flour & next 3 ingredients; add to butter mixture, beating well.
  • Step #5 Stir in almonds.
  • Step #6 Divide dough in half; shape each portion into a 9- x 2-inch log on a greased baking sheet.
  • Step #7 Bake at 350° for 30 mins or until firm.
  • Step #8 Cool on baking sheet 5 mins.
  • Step #9 Remove to wire racks to cool completely.
  • Step #10 Cut each log diagonally into 1/2-inch-thick slices with a serrated knife using a gentle sawing motion.
  • Step #11 Place on ungreased baking sheets.
  • Step #12 Bake at 350° for 5 to 7 mins.
  • Step #13 Turn cookies over, & bake 5 to 7 extra mins.
  • Step #14 Remove to wire racks to cool.
  • Step #15 *1 1/2 tbsps chocolate syrup may be substituted.
