Pint-size Pb & J Muffins Recipe

Ingredients
  • 1 c all-purpose flour
  • 1/2 c firmly packed brown sugar
  • 2 egg whites
  • 1/8 tsp salt
  • 2 tbsps creamy peanut butter
  • 1/2 tsp baking soda
  • 2 tbsps strawberry jelly or grape jelly
  •  Vegetable cooking spray
  • 1/2 c vanilla low-fat yogurt
  • 1 tbsp vegetable oil
  • 1 tsp baking powder

Directions
  • Step #1 Combine first 4 ingredients; make a well in center of mixture.
  • Step #2 Combine sugar & next 4 ingredients; beat at lowish speed of an electric mixer until mixed.
  • Step #3 Add to dry ingredients; stir just until moistened.
  • Step #4 Spoon batter into 24 miniature muffin c coated with cooking spray, filling half full.
  • Step #5 Top each with 1/4 tsp jelly, & top this with remaining batter.
  • Step #6 Bake at 400° for 12 mins or until a wooden pick inserted in center comes out clean.
  • Step #7 Remove from pans as soon as possible; let cool on a wire rack.
