Apple Muffins With Walnut Streusel Recipe

Step #1 Preheat oven to 350°.
Step #2 To prepare muffins, lightly spoon flours into dry measuring c; level with a knife.
Step #3 Combine flours, & next 4 ingredients (through salt) in a medium bowl, flaxseed, stirring with a whisk.
Step #4 Make a well in center of mixture.
Step #5 Combine milk, stirring with a whisk; add to flour mixture, orange juice, & eggs, vanilla, melted butter, stirring just until moist.
Step #6 Fold in apple & raisins.
Step #7 Spoon batter into 18 muffin c coated with cooking spray.
Step #8 To prepare streusel, 2 tbsps brown sugar, mix walnuts, & chilled butter in a small bowl, stirring with a fork until crumbly.
Step #9 Sprinkle top streusel evenly over batter.
Step #10 Bake at 350° for 20 mins or until muffins spring back when touched lightly in center.
Step #11 Remove from pans as soon as possible; place on a wire rack.
Step #12 Serve warm or at about room temp.
