Apple "fritters" Recipe

Ingredients
  • 2/3 c granulated sugar
  • 1/8 tsp ground cinnamon
  • 4 tsps butter, melted
  • 3 tbsps butter, melted
  •  Cooking spray
  • 2 packages dry yeast (about 4 1/2 tsps)
  •  Glaze:
  • 1 tbsp apple juice
  • 1 1/2 c powdered sugar
  • 1/2 c apple juice
  • 1 c warm 1% low-fat milk (100° to 110°)
  • 5 c all-purpose flour, divided
  • 2 large eggs
  • 1 tbsp butter
  •  Dough:
  • 2 tbsps granulated sugar
  •  Filling:
  • 1 tsp ground cinnamon
  • 3 c sliced peeled Granny Smith apple (about 1 lb)
  • 1 tsp salt

Directions
  • Step #1 To prepare filling, melt 1 tbsp butter In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add apple; sauté 3 mins.
  • Step #3 Add 1/2 c apple juice, 2 tbsps granulated sugar, & 1 tsp cinnamon.
  • Step #4 Reduce heat to medium-low; simmer 3 mins or until liquid is almost absorbed.
  • Step #5 Remove from heat; cool.
  • Step #6 To prepare dough, dissolve yeast in warm milk In a large-ish bowl.
  • Step #7 Let stand 5 mins or until foamy.
  • Step #8 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #9 Add 3 1/2 c flour, 2/3 c granulated sugar, 3 tbsps melted butter, salt, & eggs to yeast mixture, stirring until smooth.
  • Step #10 Add 1 c flour; stir until a soft dough forms.
  • Step #11 Turn dough out onto a lightly floured surface.
  • Step #12 Knead until smooth & elastic (about 10 mins); add enough of remaining flour, 1 tbsp at a time, to prevent dough from sticking to hands (dough will feel tacky).
  • Step #13 Place dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #14 Cover up & let rise in a warm place (85°), free from drafts, 1 1/2 hrs or until doubled in size.
  • Step #15 (Press two fingers into dough.
  • Step #16 If indentation remains, the dough has risen enough.
  • Step #17 )Punch dough down.
  • Step #18 Cover up & let rest 5 mins.
  • Step #19 Divide dough into 24 equal portions.
  • Step #20 Working with 1 portion at a time (cover remaining dough to keep from drying), roll each portion into a 3-inch circle on a lightly floured surface.
  • Step #21 Spoon about 2 tsps filling into center of dough; gather dough over filling to form a ball, pinching seam to seal.
  • Step #22 Place, seam side down, in a muffin c coated with cooking spray.
  • Step #23 Repeat procedure with remaining dough portions & filling.
  • Step #24 Cover up & let rise 40 mins or until doubled in size.
  • Step #25 Preheat oven to 400°.
  • Step #26 Uncover dough; bake this at 400° for 20 mins or until lightly browned.
  • Step #27 Remove from pan; cool on a wire rack.
  • Step #28 To prepare glaze, mix powdered sugar & remaining ingredients; drizzle over rolls.
