Blueberry-cranberry Orange Muffins Recipe

Ingredients
  • 1 tsp vanilla extract
  • 2/3 c sugar
  • 1 1/4 c low-fat buttermilk
  • 1 tbsp sugar
  • 1 1/2 tsps baking powder
  • 1/4 tsp salt
  • 1/4 c dried cranberries
  • 1/4 c butter, melted
  •  Cooking spray
  • 1/2 tsp baking soda
  • 2 c all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 c dried blueberries
  • 2 tsps grated orange rind

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & next 4 ingredients (flour through salt) In a large-ish bowl; make a well in center of mixture.
  • Step #4 Combine buttermilk & next 6 ingredients (buttermilk through egg) in a bowl; add to flour mixture.
  • Step #5 Stir just until moist.
  • Step #6 Spoon batter into 12 muffin c coated with cooking spray, & sprinkle evenly with 1 tbsp sugar.
  • Step #7 Bake at 400° for 18 mins or until lightly browned.
  • Step #8 Remove muffins from pans; cool on a wire rack.
