Linguine Frittata With Greens Recipe

Ingredients
  • 3/4 c (3 oz) shredded part-skim mozzarella cheese
  • 1/3 c 1% low-fat milk
  •  Cooking spray
  • 1/4 tsp dried oregano
  • 1 c thinly sliced leek
  • 5 large egg whites
  • 1 (10-oz) package frozen sliced collard greens, thawed & with water squeezed out
  • 1/4 c grated Parmesan cheese
  • 1 1/2 c hot cooked linguine (about 4 oz uncooked pasta)
  • 2 tsps butter, divided
  • 3 large eggs, or equivalent egg substitute
  • 1/4 tsp coarsely ground black pepper
  • 1/2 tsp kosher or table salt

Directions
  • Step #1 Coat a large ovenproof skillet with cooking spray, & melt 1 tsp butter over med-heat/flame.
  • Step #2 Add leek, & sauté 4 mins or until softened.
  • Step #3 Set aside.
  • Step #4 Whisk eggs, salt, oregano, milk, Parmesan, egg whites, & pepper In a large-ish bowl.
  • Step #5 Stir in linguine, collards, & reserved leek.
  • Step #6 Melt remaining 1 tsp butter in skillet over low heat/flame.
  • Step #7 Pour egg mixture into skillet; cover & cook 10 mins or until the top is set.
  • Step #8 Meanwhile, heat broiler.
  • Step #9 Sprinkle top frittata with mozzarella, & broil 3 mins or until golden brown.
  • Step #10 Cut into wedges.
