Whole-wheat And Potato Cinnamon Rolls Recipe

Ingredients
  • 1 package dry yeast (about 2 1/4 tsps)
  • 1 tbsp vegetable oil
  • 1/2 c packed brown sugar
  • 2 tsps ground cinnamon
  • 3/4 c sliced pecans
  • 1 c whole-wheat flour
  • 2 tbsps butter or stick margarine, melted
  • 1/2 c evaporated fat-free milk
  • 2 c bread flour, divided
  • 1/2 c mashed peeled potatoes, cooked without salt or fat
  • 2 tbsps granulated sugar
  • 1 tsp salt
  • 1/4 c packed brown sugar
  • 1 c very warm water (120° to 130°)
  •  Cooking spray

Directions
  • Step #1 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #2 Combine 1 1/2 c bread flour, salt, granulated sugar, whole-wheat flour, & yeast In a large-ish bowl.
  • Step #3 Add water, potatoes, & oil; stir until a soft dough forms.
  • Step #4 Turn dough out onto a lightly floured surface.
  • Step #5 Knead until smooth & elastic (about 8 mins); add enough of remaining bread flour, 1 tbsp at a time, to prevent dough from sticking to hands (dough will feel tacky).
  • Step #6 Place dough In a large-ish bowl coated with cooking spray, turning to coat top.
  • Step #7 Cover up & let rise in a warm place (85°), free from drafts, 45 mins or until doubled in size.
  • Step #8 (Press two fingers into the dough.
  • Step #9 If indentation remains, the dough has risen enough.
  • Step #10 ) Punch dough down.
  • Step #11 Turn dough out onto a lightly floured surface; roll this into a 20 x 7-inch rectangle.
  • Step #12 Brush butter over dough, leaving a 1/2-inch border; sprinkle with 1/4 c brown sugar & cinnamon.
  • Step #13 Beginning with a long side, roll up jelly-roll fashion; pinch seam to seal (do not seal ends).
  • Step #14 Coat a 13 x 9-inch baking dish with cooking spray; sprinkle pecans & 1/2 c brown sugar in bottom of dish.
  • Step #15 Place a long piece of dental floss or string under dough 1 inch from end of roll.
  • Step #16 Cross ends of string over top of roll; slowly pull the ends to cut through the dough.
  • Step #17 Place roll portion, cut side up, in prepared pan.
  • Step #18 Repeat procedure with remaining dough.
  • Step #19 Carefully pour the milk around roll portions.
  • Step #20 Cover up & let rise 20 mins or until doubled in size.
  • Step #21 Preheat oven to 375°.
  • Step #22 Uncover dough; bake this at 375° for 20 mins or until lightly browned.
  • Step #23 Cool in dish 5 mins on a wire rack.
  • Step #24 Place a serving platter upside down on top of rolls; invert onto platter.
