- 2 large eggs, lightly beaten
- 1/4 c plus 2 tbsps honey
- 3/4 tsp grated lemon rind
- 1/4 c finely sliced pecans
- 1/2 tsp salt
- 1 c milk
- 1/4 c plus 2 tbsps butter, softened
Directions
- Step #1 Combine first 3 ingredients; stir well, & chill in the fridge.
- Step #2 Combine flour & next 3 ingredients; beat with a wire whisk just until smooth.
- Step #3 Stir in pecans.
- Step #4 Pour batter evenly into six 6-oz greased custard c.
- Step #5 Bake at 425° for 30 mins or until golden.
- Step #6 Serve as soon as possible with chilled butter mixture.
