Pecan Popovers Recipe

Ingredients
  • 1 c all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/4 c plus 2 tbsps honey
  • 3/4 tsp grated lemon rind
  • 1/4 c finely sliced pecans
  • 1/2 tsp salt
  • 1 c milk
  • 1/4 c plus 2 tbsps butter, softened

Directions
  • Step #1 Combine first 3 ingredients; stir well, & chill in the fridge.
  • Step #2 Combine flour & next 3 ingredients; beat with a wire whisk just until smooth.
  • Step #3 Stir in pecans.
  • Step #4 Pour batter evenly into six 6-oz greased custard c.
  • Step #5 Bake at 425° for 30 mins or until golden.
  • Step #6 Serve as soon as possible with chilled butter mixture.
