Smoked Salmon And Onion Frittata Recipe

Ingredients
  • 1/8 tsp salt
  •  Cooking spray
  • 1/4 c thinly sliced green onions
  • 1 c vertically sliced onion
  • 1 tbsp minced fresh thyme
  • 2 c egg substitute
  • 2 1/2 oz 1/3-less-fat cream cheese, cut into small pieces
  • 1 tbsp olive oil, divided
  • 3 oz smoked salmon, sliced
  • 1/2 tsp freshly ground black pepper, divided
  • 2 c preshredded potatoes (such as Simply Potatoes)

Directions
  • Step #1 Heat 1 1/2 tsps olive oil in an 8-inch cast-iron skillet over med-heat/flame.
  • Step #2 Add onion; sauté 5 mins or until tender.
  • Step #3 Remove from heat.
  • Step #4 Stir in green onions, thyme, & 1/4 tsp pepper.
  • Step #5 Remove onion mixture from the skillet; set aside.
  • Step #6 Preheat broiler.
  • Step #7 Coat skillet with cooking spray.
  • Step #8 Combine the potatoes, remaining 1 1/2 tsps oil, & remaining 1/4 tsp pepper.
  • Step #9 Press potato mixture into the bottom of skillet.
  • Step #10 Broil 15 mins or until potatoes are crisp & golden.
  • Step #11 Reduce the oven temperature to 375°.
  • Step #12 Spread the onion mixture over the potato mixture; sprinkle with salmon, cheese, & salt.
  • Step #13 Pour egg substitute over the top.
  • Step #14 Bake at 375° for 38 mins or until it is puffy & lightly browned.
