Huevos Rancheros With Queso Fresco Recipe

Ingredients
  • 4 (8-inch) fat-free flour tortillas
  • 1 (16-oz) can pinto beans, rinsed & drained
  • 1 (10-oz) can sliced tomatoes & green chiles, undrained
  • 1 tbsp fresh lime juice
  • 1 c (4 oz) crumbled queso fresco cheese
  • 2 tbsps water
  • 1 (10-oz) can red enchilada sauce
  • 1/3 c sliced fresh cilantro
  •  Cooking spray
  • 4 large eggs

Directions
  • Step #1 Combine the tomatoes & enchilada sauce in a medium saucepan; bring to a boil.
  • Step #2 Reduce heat; simmer 5 mins or until slightly thick.
  • Step #3 Remove from heat; stir in the cilantro & juice.
  • Step #4 Set aside.
  • Step #5 Place water & beans in a microwave-safe bowl, & partially mash with a fork.
  • Step #6 Cover up & microwave at HIGH 2 mins or until hot.
  • Step #7 Heat a large nonstick skillet coated with cooking spray over medium-high heat.
  • Step #8 Add eggs; cook 1 min on each side or until desired degree of doneness.
  • Step #9 Warm tortillas according to package directions.
  • Step #10 Spread about 1/3 c beans over each tortilla; top each tortilla with 1 egg.
  • Step #11 Spoon 1/2 c sauce around each egg; sprinkle each serving with 1/4 c cheese.
