Cream Cheese Pancakes Recipe

Ingredients
  • 1 1/2 to 2 c milk
  • 1 tbsp butter or margarine, melted
  • 1 large egg
  • 1 (3-oz) package cream cheese, softened
  • 2 c self-rising flour
  • 2 tbsps sugar
  • 1/2 tsp vanilla extract

Directions
  • Step #1 Combine self-rising flour & sugar In a large-ish bowl; make a well in center of mixture.
  • Step #2 Combine egg & next 4 ingredients in a small bowl, stirring well; add to dry ingredients, stirring just until moistened.
  • Step #3 Pour 1/4 c batter for each pancake onto a hot, lightly greased griddle.
  • Step #4 Cook pancakes until tops are covered with bubbles & edges appear cooked; turn & cook other side.
  • Step #5 Serve pancakes with warm maple syrup and, if desired, bacon.
  • Step #6 NOTE: 1/4 c egg substitute, skim milk, & light cream cheese may be used.
  • Step #7 Pancake batter will be thinner & will cook faster.
