Strawberry-filled French Toast With Caramel And Pecans Recipe

Ingredients
  • 1/2 c granulated sugar
  •  Cooking spray
  • 1 (12-oz) loaf French bread, cut into 16 (1/4-inch-thick) slices
  •  Sauce:
  • 1 tbsp vanilla extract
  • 2 large eggs
  • 1/8 tsp salt
  • 3/4 c egg substitute
  • 3 tbsps sliced pecans
  • 1/2 c evaporated fat-free milk
  • 2 c fat-free milk
  • 1/8 tsp salt
  • 3 tbsps water
  • 1/4 tsp ground cinnamon
  • 2 tbsps powdered sugar
  • 1/2 c strawberry preserves
  • 1/8 tsp ground nutmeg
  •  French Toast:
  • 1/2 tsp vanilla extract
  • 1 tbsp butter

Directions
  • Step #1 To prepare sauce, mix granulated sugar & water in a medium, heavy saucepan.
  • Step #2 Cook over medium-low heat 3 mins or until the sugar dissolves.
  • Step #3 Cover up & cook over med-heat/flame 1 min.
  • Step #4 Uncover & cook 5 mins or until light golden (do not stir).
  • Step #5 Remove from heat, & let this stand 1 min.
  • Step #6 Add butter; stir until melted.
  • Step #7 Add evaporated milk; stir constantly.
  • Step #8 Place pan over med-heat/flame; cook 3 mins or until caramel melts & mixture is smooth, stirring constantly.
  • Step #9 Remove from heat; stir in the vanilla & salt.
  • Step #10 To prepare French toast, pour the sauce into a 13 x 9-inch baking dish coated with cooking spray.
  • Step #11 Arrange 8 bread slices in dish.
  • Step #12 Spread preserves evenly over bread; top this with remaining bread.
  • Step #13 Combine fat-free milk & next 6 ingredients (through eggs).
  • Step #14 Pour milk mixture over bread; sprinkle with pecans.
  • Step #15 Preheat oven to 350°.
  • Step #16 Bake, uncovered, at 350° for 35 mins or until top is golden.
  • Step #17 Let cool 5 mins.
  • Step #18 Sprinkle top with powdered sugar.
