Fruit And Nut Breakfast Tabbouleh Recipe

Ingredients
  • 1 can (about 8 oz.) crushed pineapple
  • 2 tbsps each dried sweetened cranberries, dried currants, & sliced dates
  • 1/4 tsp ground nutmeg
  • 2 tsps lemon juice
  • 1/2 tsp ground cinnamon
  • 1/4 c sliced pecans
  • 1 c sliced peeled Golden Delicious apples
  •  About 1/2 c cranberry juice mix
  • 1/2 c bulgur wheat

Directions
  • Step #1 Drain juice from pineapple into a glass measure; pour pineapple into a large bowl.
  • Step #2 To pineapple juice add enough cranberry juice mix to make 1 c; pour this into a 1- to 1 1/2-quart pan & add cinnamon & nutmeg.
  • Step #3 Bring to a boil over high heat; add bulgur.
  • Step #4 Stir, reduce heat, & let simmer until juices are absorbed, cover, about 15 mins.
  • Step #5 Add to pineapple the apples, lemon juice, dates, cranberries, currants, & pecans; mix.
  • Step #6 Add warm bulgur & mix.
  • Step #7 Serve hot, warm, or cool; if making up to 1 day ahead, cover when cool & chill in the fridge.
