Sweet Potato And Pecan Flapjacks Recipe

Ingredients
  • 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 tbsp canola oil
  • 1/2 tsp vanilla extract
  • 1 c fat-free milk
  • 1 1/4 c all-purpose flour (about 5 1/2 oz)
  • 1/4 c sliced pecans, toasted
  • 2 large egg yolks
  • 3 tbsps yellow cornmeal
  • 2 tsps baking powder
  • 2 large egg whites, lightly beaten
  • 3 tbsps brown sugar
  • 1 c mashed cooked sweet potato
  •  Cooking spray

Directions
  • Step #1 Lightly spoon all-purpose flour into dry measuring c; level with a knife.
  • Step #2 Combine flour & next 5 ingredients (through cinnamon) In a large-ish bowl, stirring with a whisk.
  • Step #3 Combine milk, oil, vanilla, sweet potato, & egg yolks, stirring until smooth; add to flour mixture, sugar, stirring just until mixd.
  • Step #4 Beat egg whites with a mixer at high speed until soft peaks form; fold egg whites into batter.
  • Step #5 Let batter stand 10 mins.
  • Step #6 Heat a nonstick griddle or nonstick skillet over medium-high heat.
  • Step #7 Coat griddle or pan with cooking spray.
  • Step #8 Spoon about 1/4 c batter per pancake onto griddle or pan.
  • Step #9 Cook 2 mins or until tops are covered with bubbles & edges look cooked.
  • Step #10 Carefully turn pancakes over, & cook 2 mins or until bottoms are lightly browned.
