Blueberry Yogurt Cake Recipe

Ingredients
  • 1/2 c plus 2 tbsps butter
  • 1 c sliced walnuts
  • 1/2 c granulated sugar
  • 2 large eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 c plain low-fat yogurt
  • 1 1/4 c all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp nutmeg
  • 1 c blueberries
  • 1/4 tsp baking soda
  • 1/2 c light brown sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 In a large bowl, cream 1/2 c butter with the granulated sugar until light & fluffy.
  • Step #3 Beat in eggs & vanilla.
  • Step #4 In a medium bowl, sift together flour, baking powder, baking soda, & salt.
  • Step #5 Stir into butter mixture.
  • Step #6 Add yogurt & mix; carefully stir in the blueberries.
  • Step #7 In a small bowl, stir this together the brown sugar, nutmeg, cinnamon, & walnuts.
  • Step #8 Pour half the cake batter into a buttered & floured 8-inch square baking pan.
  • Step #9 Sprinkle top with half the brown sugar mixture & top this with the remaining batter.
  • Step #10 Combine the remaining brown sugar mixture with 2 tbsps butter & sprinkle it over the top of the batter.
  • Step #11 Bake until toothpick inserted into center comes out clean, about 45 mins.
