Country Ham With Redeye Gravy Recipe

Ingredients
  • 2 (12-oz) slices boneless country ham
  • 1/4 c firmly packed brown sugar
  • 2 c hot strong brewed coffee

Directions
  • Step #1 Stir together coffee & sugar; let mixture cool.
  • Step #2 Cook ham In a large-ish cast-iron skillet over med-heat/flame 5 to 7 mins on each side or until browned.
  • Step #3 Remove ham, & keep warm, reserving drippings in skillet.
  • Step #4 Add coffee mixture to skillet, stirring to loosen particles from bottom; bring to a boil.
  • Step #5 Boil, stirring every once in awhile, until reduced by half (about 15 mins).
  • Step #6 Serve as soon as possible with ham.
