Cranberry-citrus Muffins Recipe

Ingredients
  • 1/2 tsp salt
  • 1 1/2 c sliced cranberries
  • 2 large egg whites
  •  Cooking spray
  • 2 tsps baking powder
  • 1 large egg
  • 2 c plus 2 tbsps all-purpose flour
  • 1/2 tsp grated lemon rind
  • 1 1/2 tsps turbinado sugar or granulated sugar
  • 1/2 c vegetable oil
  • 1 (8-oz) carton vanilla low-fat yogurt
  • 2/3 c granulated sugar
  • 1/2 tsp vanilla extract

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Combine cranberries & 2 tbsps flour, tossing carefully; set aside.
  • Step #3 Lightly spoon 2 c flour into dry measuring c, & level with a knife.
  • Step #4 Combine flour, granulated sugar, baking powder, & salt In a large-ish bowl.
  • Step #5 Whisk together oil & next 5 ingredients (through egg) in a medium bowl.
  • Step #6 Make a well in center of flour mixture; add oil mixture, stirring just until flour mixture is moist.
  • Step #7 Fold in cranberry mixture.
  • Step #8 Spoon the batter into 12 muffin c coated with cooking spray.
  • Step #9 Sprinkle top sugar evenly over muffins.
  • Step #10 Bake at 375° for 33 mins.
  • Step #11 Remove muffins from pans as soon as possible, & place on a wire rack.
