Quick And Easy Banana-oat Muffins Recipe

Ingredients
  • 3/4 tsp vanilla extract
  • 2 mashed ripe bananas (about 3/4 c)
  • 1/4 c sugar
  • 2 tbsps canola oil
  •  Cooking spray
  • 1/2 tsp ground cinnamon
  • 1/2 c quick-cooking oats
  • 2/3 c white whole-wheat flour (such as King Arthur) or whole-wheat flour
  • 1/4 tsp salt
  • 1/2 c fat-free milk
  • 1 egg
  • 1 3/4 tsps baking powder

Directions
  • Step #1 Preheat oven to 375º.
  • Step #2 Combine bananas & next 4 ingredients (through vanilla) in a medium bowl; mix well, & set aside.
  • Step #3 Lightly spoon flour into a dry measuring c & level with a knife.
  • Step #4 Whisk together flour & next 5 ingredients (through salt) in a small bowl.
  • Step #5 Stir the flour mixture into the banana mixture until they are just mixd.
  • Step #6 Spray 9 muffin c with cooking spray (or use paper liners), & spoon 1/3 c batter into each c (c will be full).
  • Step #7 Bake 16 mins or until a wooden pick inserted in center comes out clean.
