Apple Soup With Pound Cake Croutons Recipe

Ingredients
  •  Dash of ground allspice
  • 3 Granny Smith apples, peeled, cored, & quartered
  • 1/2 c water
  • 1/2 c sugar
  •  Soup:
  •  Croutons:
  • 1 (3-inch) cinnamon stick
  • 3 Braeburn apples, peeled, cored, & quartered
  • 1 c dry white wine
  •  Dash of ground cloves
  • 1 c apple cider
  • 1 (10.75-oz) loaf reduced-fat lb cake (such as Sara Lee)
  • 1/2 c half-and-half

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 To prepare croutons, slice cake crossways into 8 (1/2-inch) slices; reserve remaining cake for another use.
  • Step #3 Cut each slice diagonally into 2 pieces.
  • Step #4 Place cake pieces on a baking sheet.
  • Step #5 Bake at 375° for 8 mins or until lightly browned, turning after 4 mins.
  • Step #6 Cool completely on a wire rack.
  • Step #7 To prepare soup, mix cider & next 8 ingredients (cider through cinnamon) In a large-ish Dutch oven; bring to a boil.
  • Step #8 Reduce heat to medium-low; simmer, uncovered, 30 mins or until apples are very tender.
  • Step #9 Remove cinnamon stick with a slotted spoon; discard.
  • Step #10 Place half of apple mixture in a mixer or food processor/blender; let this stand 5 mins.
  • Step #11 Cover up tightly; process until smooth.
  • Step #12 Pour pureed apple mixture into a large bowl.
  • Step #13 Repeat procedure with remaining apple mixture.
  • Step #14 Place pureed mixture in pan; stir in the half-and-half.
  • Step #15 Cook over low heat/flame 5 mins or until heated, stirring every once in awhile.
