Blackberry-almond Tea Cakes Recipe

Ingredients
  • 1/2 c (1/4 lb.) butter, at about room temp
  • 2 large eggs
  • 1 package (7 oz.) almond paste
  • 2 c fresh blackberries (see notes)
  • 2 tsps freshly grated orange zest
  • 1/4 c granulated sugar
  • 1 c all-purpose flour
  •  Powdered sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 In a bowl, mix butter, granulated sugar, almond paste, & orange zest.
  • Step #3 With a mixer on high speed, beat until mixture is mixed, about 2 mins.
  • Step #4 Add eggs & beat until fluffy, 1 or 2 mins.
  • Step #5 Add flour, stir this to mix, then increase speed & beat until well mixed.
  • Step #6 Batter will be thick.
  • Step #7 Fill a pan of 12 buttered or paper-lined muffin c (1/2-c capacity) about 2/3 full with batter.
  • Step #8 With a small flexible spatula, spread batter smooth.
  • Step #9 Arrange a few blackberries on top of batter in each c; lightly press berries into batter.
  • Step #10 Bake until cakes are golden brown, 25 to 30 mins.
  • Step #11 Cool in pan about 5 mins.
  • Step #12 Serve dusted with powdered sugar.
