Ingredients
3 tbsps butter
1/8 tsp ground black pepper
1/4 c sliced fresh basil
1/2 c chicken broth
4 skinless, boneless chicken breasts
1/2 c grated Parmesan cheese
1 c heavy whipping cream
1 (4 oz) jar sliced pimento peppers, drained
1/4 c dried bread crumbs
1/4 c milk
Directions
Step #1 Place milk & bread crumbs in separate, shallow bowls.
Step #2 In skillet, heat butter or margarine to medium heat.
Step #3 Dip chicken in milk, then coat with crumbs.
Step #4 Cook in butter or margarine, on both sides, until juices run clear (about 10 mins).
Step #5 Remove & keep warm.
Step #6 Add broth to skillet.
Step #7 Bring to a boil over med-heat/flame, & stir this to loosen browned bits from pan.
Step #8 Stir in cream & pimentos; boil & stir for 1 min.
Step #9 Reduce heat.
Step #10 Add Parmesan cheese, basil & pepper.
Step #11 Stir sauce & cook this until heated through.
Step #12 Pour mixture over chicken & serve!.
