Maple Date-nut Oatmeal Breakfast Squares Recipe

Ingredients
  • 1/4 c maple syrup
  • 3 c quick-cooking oats (not instant)
  • 1 1/2 tsps ground cinnamon
  • 1/2 c applesauce
  • 1 1/2 tsps vanilla extract
  • 1/2 tsp baking soda
  • 1 egg
  • 1 c sliced pitted dates
  • 1/4 c coarsely sliced walnuts
  • 1/2 c brown sugar
  • 1/2 c vanilla low-fat yogurt
  • 3 tbsps butter, softened
  • 1 1/2 c all-purpose flour
  • 1 tsp salt
  • 1/4 c granulated sugar

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Mix all ingredients In a large-ish bowl, stirring slowly with a wooden spoon until well mixd.
  • Step #3 Spray a 9- x 13-inch baking pan with cooking spray.
  • Step #4 Pour batter into pan, & spread evenly.
  • Step #5 Bake 25 mins or until just golden brown around edges.
  • Step #6 Cool & cut into squares.
