Pear-walnut Muffins Recipe

Ingredients
  • 1/3 c coarsely sliced walnuts, toasted
  • 1/2 c whole-wheat flour or all-purpose flour
  • 1 1/4 c finely sliced pear
  • 1 tbsp granulated sugar
  • 1 large egg, lightly beaten
  • 1/2 tsp ground cinnamon
  • 2 tbsps vegetable oil
  • 1/2 tsp salt
  • 1 1/2 c all-purpose flour
  • 1 tbsp baking powder
  •  Cooking spray
  • 3/4 c 2% low-fat milk
  • 2/3 c firmly packed brown sugar

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine first 6 ingredients in a medium bowl; stir well.
  • Step #3 Add pear & walnuts; toss carefully to coat.
  • Step #4 Make a well in center of mixture.
  • Step #5 Combine milk, oil, & egg; & stir well.
  • Step #6 Add to flour mixture, stirring just until moist (dough will be sticky).
  • Step #7 Divide batter evenly among 12 muffin c coated with cooking spray; sprinkle with granulated sugar.
  • Step #8 Bake at 400° for 20 mins or until a wooden pick inserted in center comes out clean.
  • Step #9 Remove muffins from pans as soon as possible; let cool on a wire rack.
