Hearty Healthy Breakfast Casserole Recipe

Ingredients
  • 1/2 c sliced Vidalia onion
  • 1/2 c sliced red bell pepper
  •  No-Stick Cooking Spray
  • 6 tbsps reduced-fat bacon bits
  • 1 c Fat Free Dairy Beverage
  • 3/4 c (3 oz) shredded Cheddar CHEESE
  • 4 100% Whole Wheat Bread slices, cut into 1-inch pieces
  • 1/4 c Grated Parmesan Cheese
  • 4 large eggs
  • 1/4 tsp pepper

Directions
  • Step #1 Sauté sliced bell pepper & sliced onion in a nonstick skillet over med-heat/flame 4 mins or until tender.
  • Step #2 Whisk together bell pepper mixture, dairy beverage, eggs, & next 3 ingredients In a large-ish bowl.
  • Step #3 Coat a 2-quart baking dish with cooking spray.
  • Step #4 Layer bread pieces evenly in dish; pour egg mixture over bread, & sprinkle with bacon bits.
  • Step #5 Bake at 350° for 30 to 45 mins or until a knife inserted in center comes out clean.
  • Step #6 Serve as soon as possible.
