Huevos Rancheros Recipe

Ingredients
  • 2 tsps chili powder
  • 1/4 tsp salt
  • 1 (4.5-oz) can sliced green chiles, undrained
  • 2 tbsps sliced green onions
  • 2 eggs
  • 1 (15-oz) can no-salt-added black beans, drained
  • 2 tbsps (1/2 oz) shredded reduced-fat sharp cheddar cheese
  • 1 (14.5-oz ) can no-salt-added tomatoes, undrained & sliced
  • 1/2 tsp ground cumin
  • 1/8 tsp pepper
  • 2 tbsps sliced fresh cilantro

Directions
  • Step #1 Combine the first 8 ingredients In a large-ish nonstick skillet; stir well, & bring to a boil.
  • Step #2 Cover up, reduce the heat, & let simmer the tomato mixture for 10 mins.
  • Step #3 Break each egg into a custard c, & slip eggs from c into tomato mixture.
  • Step #4 Cover up & let simmer for 6 mins or until the eggs are done.
  • Step #5 Remove eggs with a slotted spoon.
  • Step #6 Spoon half of the tomato mixture onto each of 2 plates, & top this with eggs.
  • Step #7 Sprinkle top 1 tbsp cheese & 1 tbsp green onions over each serving.
