1 tbsp chilled butter or stick margarine, cut into small pieces
1/4 c all-purpose flour
1/3 c packed brown sugar
1 tsp baking powder
1 1/2 c pitted sweet cherries, quartered
Cake:
1 1/2 tsps vanilla extract
1/2 c granulated sugar
1 large egg
1 1/2 c all-purpose flour
1/4 c regular oats
1 1/2 tbsps butter or stick margarine, softened
1 c plain low-fat yogurt
1/4 tsp salt
1/2 tsp baking soda
Directions
Step #1 Preheat oven to 350°.
Step #2 To prepare topping, lightly spoon 1/4 c flour into a dry measuring c, & level with a knife.
Step #3 Combine flour, oats, brown sugar, & cinnamon in a small bowl; cut in 1 tbsp butter with a pastry mixer or 2 knives until mixture resembles coarse meal.
Step #4 Set aside.
Step #5 To prepare the cake, lightly spoon 1 1/2 c flour into dry measuring c; level with a knife.
Step #6 Combine flour, baking soda, baking powder, & salt in a bowl; set aside.
Step #7 Beat granulated sugar & 1 1/2 tbsps butter at medium speed of a mixer.
Step #8 Add the yogurt, extracts, & egg; beat well.
Step #9 Add flour mixture, & beat at lowish speed until well-mixed (batter will be thick).
Step #10 Spread half of batter in bottom of an 8-inch square baking pan coated with cooking spray, & top this with cherries.
Step #11 Sprinkle top with 3 tbsps topping.
Step #12 Repeat procedure with the remaining batter & topping.
