Apple-oat Muffins Recipe

Ingredients
  • 1/2 tsp ground cinnamon
  • 1 1/2 tsps baking powder
  • 2 tbsps vegetable oil
  • 1/2 tsp baking soda
  • 1 large egg
  • 1 1/2 c all-purpose flour
  • 2 c shredded peeled McIntosh apple (about 3/4 lb)
  • 1/2 tsp salt
  • 2/3 c packed brown sugar
  • 1 c quick-cooking oats
  • 1 (8-oz) carton plain low-fat yogurt
  • 1 tsp vanilla extract
  • 1/4 c fat-free milk
  •  Cooking spray

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Place apple on paper towels; squeeze until barely moist.
  • Step #3 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #4 Combine the flour & next 6 ingredients (flour through cinnamon) in a medium bowl; stir with a whisk.
  • Step #5 Make a well in center of mixture.
  • Step #6 Combine milk, yogurt, vanilla, oil, & egg; stir well with a whisk.
  • Step #7 Add to flour mixture, stirring just until moist.
  • Step #8 Stir in apple.
  • Step #9 Spoon batter into 12 muffin c coated with cooking spray.
  • Step #10 Bake at 400° for 20 mins or until muffins spring back when touched lightly in center.
  • Step #11 Remove muffins from pans as soon as possible; place on a wire rack.
