Ingredients
2 1/2 c all-purpose flour
2 c shredded carrot
2 tsps baking soda
1/3 c vegetable oil
2 tsps vanilla extract
1/3 c apple butter
2 large eggs
2 large egg whites
2 tsps ground cinnamon
1 c shredded Rome or other cooking apple
1 c packed brown sugar
1/4 c flaked sweetened coconut
Cooking spray
1 (8-oz) can crushed pineapple in juice, drained
1/2 tsp salt
3/4 c raisins
1/3 c sliced pecans
Directions
Step #1 Preheat oven to 350°.
Step #2 Lightly spoon flour into dry measuring c; level with a knife.
Step #3 Combine flour & next 4 ingredients (flour through salt) In a large-ish bowl.
Step #4 Stir in carrot & next 5 ingredients (carrot through pineapple); make a well in center of mixture.
Step #5 Combine oil & next 4 ingredients (oil through egg whites); stir with a whisk.
Step #6 Add oil mixture to flour mixture, stirring just until moist.
Step #7 Spoon the batter into 24 muffin c coated with cooking spray.
Step #8 Bake at 350° for 25 mins or until muffins spring back when touched lightly in center.
Step #9 Remove muffins from pans as soon as possible; cool on a wire rack.
Step #10 Note: Muffins can be stored in an airtight container & frozen for up to 1 month.
Step #11 Wrap in foil wrap, & reheat at 300°.
