Morning Glory Muffins Recipe

Ingredients
  • 2 1/2 c all-purpose flour
  • 2 c shredded carrot
  • 2 tsps baking soda
  • 1/3 c vegetable oil
  • 2 tsps vanilla extract
  • 1/3 c apple butter
  • 2 large eggs
  • 2 large egg whites
  • 2 tsps ground cinnamon
  • 1 c shredded Rome or other cooking apple
  • 1 c packed brown sugar
  • 1/4 c flaked sweetened coconut
  •  Cooking spray
  • 1 (8-oz) can crushed pineapple in juice, drained
  • 1/2 tsp salt
  • 3/4 c raisins
  • 1/3 c sliced pecans

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & next 4 ingredients (flour through salt) In a large-ish bowl.
  • Step #4 Stir in carrot & next 5 ingredients (carrot through pineapple); make a well in center of mixture.
  • Step #5 Combine oil & next 4 ingredients (oil through egg whites); stir with a whisk.
  • Step #6 Add oil mixture to flour mixture, stirring just until moist.
  • Step #7 Spoon the batter into 24 muffin c coated with cooking spray.
  • Step #8 Bake at 350° for 25 mins or until muffins spring back when touched lightly in center.
  • Step #9 Remove muffins from pans as soon as possible; cool on a wire rack.
  • Step #10 Note: Muffins can be stored in an airtight container & frozen for up to 1 month.
  • Step #11 Wrap in foil wrap, & reheat at 300°.
