Coconut Scones Recipe

Ingredients
  • 1/2 c sweetened flaked coconut
  • 2 large eggs
  • 2 tsps baking powder
  • 3 tbsps sugar
  • 1/2 c milk
  • 1/3 c cold butter, cut into chunks
  • 1/4 c raspberry or cherry jam
  • 1 3/4 c all-purpose flour
  • 1/4 tsp salt
  • 1/2 c rolled oats

Directions
  • Step #1 In a large bowl, 2 tbsps sugar, mix flour, coconut, baking powder, oats, & salt.
  • Step #2 With your fingers or a pastry mixer, rub or cut in butter until mixture forms coarse crumbs.
  • Step #3 In a small bowl, beat eggs & milk to mix.
  • Step #4 Stir all but about 1 tbsp egg mixture into flour mixture just until evenly moistened.
  • Step #5 Scrape dough onto a lightly floured board & pat into an 8-inch round.
  • Step #6 Slide round onto a buttered 12- by 15-inch baking sheet & cut into 8 wedges, leaving wedges in place.
  • Step #7 Brush top of round with reserved egg mixture & sprinkle with remaining tbsp sugar.
  • Step #8 Make a 1-inch-diameter depression on top of the wide end of each wedge & fill each with about 1/2 tbsp jam.
  • Step #9 Bake in a 375° regular or convection oven until golden brown, 18 to 20 mins.
  • Step #10 Recut scones to separate & serve warm, or transfer to a rack to cool completely.
