Cream Cheese Blueberry Pie Recipe

Ingredients
  • 1/2 c confectioners' sugar
  • 1/2 c water
  • 1/4 c cornstarch
  • 4 oz cream cheese, softened
  • 1/4 c lemon juice
  • 3 c fresh or frozen blueberries
  • 1/2 c heavy whipping cream, whipped
  • 1 (9 inch) pastry shell, baked
  • 2/3 c sugar

Directions
  • Step #1 In a small mixing bowl, beat cream cheese & confectioners' sugar until smooth.
  • Step #2 Fold in whipped cream.
  • Step #3 Spread into pastry shell.
  • Step #4 In a large saucepan, mix the sugar, cornstarch, water & lemon juice until smooth; stir in the blueberries.
  • Step #5 Bring to a boil over med-heat/flame; cook & stir for 2 mins or until thickened.
  • Step #6 Cool.
  • Step #7 Spread over cream cheese layer.
  • Step #8 Refrigerate until serving.
