Blueberry Buttermilk Pancakes Recipe

Ingredients
  • 1 1/2 c low-fat buttermilk
  • 2 c all-purpose flour
  • 1 tsp baking powder
  • 1 large egg, lightly beaten
  • 1/2 c 1% low-fat milk
  • 1 tbsp sugar
  • 1 tbsp vegetable oil
  • 1/2 tsp baking soda
  •  Cooking spray
  • 2 c blueberries
  • 1 tsp salt

Directions
  • Step #1 Lightly spoon flour into dry measuring c, & level with a knife.
  • Step #2 Combine flour, baking powder, salt, sugar, & baking soda In a large-ish bowl.
  • Step #3 Combine buttermilk, & add to flour mixture, milk, oil, & egg in a bowl, stirring until smooth.
  • Step #4 Spoon 1/4 c pancake batter onto a hot nonstick griddle or large nonstick skillet coated with cooking spray, & top this with 2 heaping tbsps blueberries.
  • Step #5 Turn the pancake when the top is covered with bubbles & the edges look cooked.
  • Step #6 Repeat the procedure with the remaining batter & blueberries.
