Eggs With Red Onion And Spinach Recipe

Ingredients
  • 10 eggs
  • 1 thinly sliced medium red onion
  • 2 tbsps milk or water
  • 1 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  •  5-oz bag of prewashed baby spinach
  • 1 1/2 tbsps unsalted butter

Directions
  • Step #1 In a large nonstick skillet, over med-heat/flame, melt the butter.
  • Step #2 Saute the onion until softened.
  • Step #3 Meanwhile, the milk or water, the salt, In a large-ish bowl, whisk together the eggs, & the pepper.
  • Step #4 Pour the mixture into the pan & cook, stirring every once in awhile, to desired doneness, 4 to 5 mins.
  • Step #5 Just before the eggs are set, stir in the the spinach.
