Spanish Tortilla Recipe

Ingredients
  • 2 tbsps olive oil
  • 3/4 tsp salt
  • 1 onion (about 8 oz.), peeled, halved, & thinly sliced crosswise
  • 1/2 tsp pepper
  • 5 large eggs
  • 2 lbs thin-skinned potatoes, peeled & sliced into 1/8-inch-thick rounds

Directions
  • Step #1 Pour olive oil into a 10- to 12-inch nonstick ovenproof frying pan over medium-high heat; when hot, add onion & stir often until limp, about 5 mins.
  • Step #2 Add potatoes, 1/2 tsp salt, & 1/4 tsp pepper; mix to coat.
  • Step #3 Add 1/3 c water & bring to a boil; reduce heat to medium, cover, & cook this until potatoes are tender when pierced, about 10 mins.
  • Step #4 If any liquid remains in pan, boil, until evaporated, uncovered, 1 to 2 mins.
  • Step #5 Meanwhile, In a large-ish bowl, beat eggs with 1/4 tsp salt & 1/4 tsp pepper to mix.
  • Step #6 Add potato mixture & mix carefully.
  • Step #7 Place unwashed frying pan over medium-high heat; when hot, pour in egg mixture.
  • Step #8 Reduce heat to medium-low & cook this until eggs begin to set & bottom is lightly browned, 5 to 8 mins.
  • Step #9 Transfer pan to oven & broil tortilla about 6 inches from heat until top is set, 3 to 5 mins.
  • Step #10 Run a spatula between tortilla & pan to loosen; invert tortilla onto a plate.
  • Step #11 Cut into wedges & serve warm or at about room temp.
