Apricot Scones Recipe

Ingredients
  • 1/2 tsp baking soda
  •  Cooking spray
  • 1/4 c chilled butter or stick margarine, cut into small pieces
  • 2 large eggs
  • 1/2 c sugar
  • 2 tsps baking powder
  • 1/2 c low-fat buttermilk
  • 1/2 tsp ground cinnamon
  • 1/2 c finely sliced dried apricots
  • 2 tsps sugar
  • 2 1/2 c all-purpose flour
  • 1/4 tsp salt

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & the next 4 ingredients (flour through salt), & cut in butter with a pastry mixer or 2 knives until the mixture resembles coarse meal.
  • Step #4 Stir in the apricots.
  • Step #5 Combine the buttermilk & eggs, stirring with a whisk.
  • Step #6 Add to flour mixture, stirring just until moist (dough will be sticky).
  • Step #7 Turn dough out onto a lightly floured surface; knead lightly 4 times.
  • Step #8 Pat dough into a 9-inch circle on a baking sheet coated with cooking spray.
  • Step #9 Cut dough into 12 wedges, cutting into but not through dough.
  • Step #10 Combine 2 tsps sugar & cinnamon, & sprinkle it over dough.
  • Step #11 Bake at 400° for 20 mins or until golden.
  • Step #12 Serve warm.
