1/4 c chilled butter or stick margarine, cut into small pieces
2 large eggs
1/2 c sugar
2 tsps baking powder
1/2 c low-fat buttermilk
1/2 tsp ground cinnamon
1/2 c finely sliced dried apricots
2 tsps sugar
2 1/2 c all-purpose flour
1/4 tsp salt
Directions
Step #1 Preheat oven to 400°.
Step #2 Lightly spoon flour into dry measuring c; level with a knife.
Step #3 Combine flour & the next 4 ingredients (flour through salt), & cut in butter with a pastry mixer or 2 knives until the mixture resembles coarse meal.
Step #4 Stir in the apricots.
Step #5 Combine the buttermilk & eggs, stirring with a whisk.
Step #6 Add to flour mixture, stirring just until moist (dough will be sticky).
Step #7 Turn dough out onto a lightly floured surface; knead lightly 4 times.
Step #8 Pat dough into a 9-inch circle on a baking sheet coated with cooking spray.
Step #9 Cut dough into 12 wedges, cutting into but not through dough.
Step #10 Combine 2 tsps sugar & cinnamon, & sprinkle it over dough.
Step #11 Bake at 400° for 20 mins or until golden.
