Peanut Butter-and-jam Oatmeal Bars Recipe

Ingredients
  • 3/4 c butter, melted
  • 1/2 c creamy peanut butter
  • 2 1/2 c uncooked quick-cooking oats
  • 1 (18.25-oz.) package yellow cake mix
  • 1/2 c sliced roasted peanuts
  • 1/2 c strawberry preserves

Directions
  • Step #1 Line bottom & sides of a 13- x 9-inch pan with aluminum foil wrap, allowing 2 to 3 inches to extend over sides; lightly grease foil wrap.
  • Step #2 Stir together cake mix & oats In a large-ish bowl.
  • Step #3 Stir in butter with a fork until mixture is crumbly & dry ingredients are moistened.
  • Step #4 Press half of oat mixture evenly onto bottom of prepared pan.
  • Step #5 Stir together peanut butter & preserves in a medium bowl.
  • Step #6 Gently spread peanut butter mixture evenly over oat mixture in pan.
  • Step #7 Sprinkle top peanuts & remaining half of oat mixture evenly over peanut butter mixture.
  • Step #8 Bake at 375° for 30 mins or until top is golden brown.
  • Step #9 Let cool in pan on a wire rack 1 hr or until completely cool.
  • Step #10 Lift baked bars from pan, using foil wrap sides as handles.
  • Step #11 Place on a cutting board, & cut into 24 bars.
