Ingredients
2 tbsps butter or margarine, softened
3 tbsps powdered sugar
1/2 c flaked coconut
1 (8-oz) package cream cheese, softened
3/4 c whipping cream
1 c firmly packed brown sugar
1 c sliced pecans
1/2 c butter or margarine
2 (12-oz) cans put in the fridged flaky biscuits
1 orange
Directions
Step #1 Grate 1 tbsp rind from orange; set rind aside.
Step #2 Squeeze 1/4 c juice from orange.
Step #3 Combine juice, whipping cream, brown sugar, & 1/2 c butter in a saucepan.
Step #4 Bring to a boil over med-heat/flame.
Step #5 Boil 3 mins.
Step #6 Remove from heat, & let cool slightly.
Step #7 Pour mixture into a greased 13" x 9" x 2" baking dish; sprinkle with pecans.
Step #8 Set aside.
Step #9 Combine reserved orange rind, cream cheese, powdered sugar, & 2 tbsps butter in a small mixing bowl.
Step #10 Beat at medium speed of an electric mixer just until mixed.
Step #11 Stir in coconut.
Step #12 Separate biscuit dough into 20 pieces.
Step #13 Quickly roll each biscuit on a lightly floured surface to a 4" circle.
Step #14 Spread 1 tbsp cream cheese mixture onto center of each biscuit circle.
Step #15 Roll up, jellyroll fashion.
Step #16 Place biscuits over brown sugar mixture in dish, seam side down, in 2 long rows.
Step #17 Bake, uncovered, at 350° on lowest rack in oven for 32 mins or until browned.
Step #18 Let cool in dish 5 mins.
Step #19 Carefully turn pastries out onto a large serving platter.
Step #20 Top with any remaining brown sugar glaze.
Step #21 Note: We used Hungry Jack biscuits in this recipe.
