Orange-cream Cheese Pastries Recipe

Ingredients
  • 2 tbsps butter or margarine, softened
  • 3 tbsps powdered sugar
  • 1/2 c flaked coconut
  • 1 (8-oz) package cream cheese, softened
  • 3/4 c whipping cream
  • 1 c firmly packed brown sugar
  • 1 c sliced pecans
  • 1/2 c butter or margarine
  • 2 (12-oz) cans put in the fridged flaky biscuits
  • 1 orange

Directions
  • Step #1 Grate 1 tbsp rind from orange; set rind aside.
  • Step #2 Squeeze 1/4 c juice from orange.
  • Step #3 Combine juice, whipping cream, brown sugar, & 1/2 c butter in a saucepan.
  • Step #4 Bring to a boil over med-heat/flame.
  • Step #5 Boil 3 mins.
  • Step #6 Remove from heat, & let cool slightly.
  • Step #7 Pour mixture into a greased 13" x 9" x 2" baking dish; sprinkle with pecans.
  • Step #8 Set aside.
  • Step #9 Combine reserved orange rind, cream cheese, powdered sugar, & 2 tbsps butter in a small mixing bowl.
  • Step #10 Beat at medium speed of an electric mixer just until mixed.
  • Step #11 Stir in coconut.
  • Step #12 Separate biscuit dough into 20 pieces.
  • Step #13 Quickly roll each biscuit on a lightly floured surface to a 4" circle.
  • Step #14 Spread 1 tbsp cream cheese mixture onto center of each biscuit circle.
  • Step #15 Roll up, jellyroll fashion.
  • Step #16 Place biscuits over brown sugar mixture in dish, seam side down, in 2 long rows.
  • Step #17 Bake, uncovered, at 350° on lowest rack in oven for 32 mins or until browned.
  • Step #18 Let cool in dish 5 mins.
  • Step #19 Carefully turn pastries out onto a large serving platter.
  • Step #20 Top with any remaining brown sugar glaze.
  • Step #21 Note: We used Hungry Jack biscuits in this recipe.
