Whole-grain Blackberry Spice Muffins Recipe

Ingredients
  • 1 c fat-free milk
  • 1/2 tsp salt
  • 1 1/2 tsps baking powder
  • 1/4 c granulated sugar
  • 1 1/2 c frozen blackberries, coarsely sliced
  • 1 large egg, lightly beaten
  • 3 tbsps butter, melted
  • 1 tsp vanilla extract
  • 1 c rolled oats
  • 1/2 tsp baking soda
  •  Cooking spray
  • 2 c all-purpose flour (about 9 oz)
  • 1 c packed dark brown sugar
  • 1/2 tsp apple-pie spice

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #3 Combine flour & next 6 ingredients (through apple-pie spice) In a large-ish bowl.
  • Step #4 Make a well in center of mixture.
  • Step #5 Combine milk, vanilla, & egg in a small bowl; add to flour mixture, butter, stirring until just moist.
  • Step #6 Gently stir in the blackberries.
  • Step #7 Spoon 1/4 c batter into each of 17 paper-lined muffin c coated with cooking spray.
  • Step #8 Bake at 400° for 16 mins.
  • Step #9 Sprinkle top muffins evenly with granulated sugar; bake 3 mins or until muffins spring back when touched lightly in center.
  • Step #10 Cool in pans 10 mins on wire racks.
