1 1/2 c mashed bananas (1 1/4 lbs unpeeled bananas, about 4 medium)
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
1/2 tsp baking soda
Directions
Step #1 Beat butter & cream cheese at medium speed with an electric mixer until creamy.
Step #2 Gradually add sugar, beating until light & fluffy.
Step #3 Add eggs, 1 at a time, beating just until mixed after each addition.
Step #4 Combine flour & next 3 ingredients; slowly add to butter mixture, beating at lowish speed just until mixed.
Step #5 Stir in bananas, pecans, & vanilla.
Step #6 Spoon batter into 2 greased & floured 8- x 4-inch loafpans.
Step #7 Bake at 350° for 1 hr or until a long wooden pick inserted in center comes out clean & sides pull away from pan, shielding with aluminum foil wrap last 15 mins to prevent browning, if necessary.
Step #8 Cool bread in pans on wire racks 10 mins.
Step #9 Remove from pans, & cool 30 mins on wire racks before slicing.
Step #10 Cream Cheese-Banana-Nut Muffins: To bake muffins, spoon batter evenly into 24 paper-lined muffin c.
Step #11 Bake at 350° for 25 mins or until a wooden pick inserted in center comes out clean.
Step #12 Cool in pans 10 mins.
Step #13 Remove from pans, & cool completely on wire racks.
Step #14 Makes 24 muffins.
Step #15 Prep: 15 min.
Step #16 , Bake: 25 min.
Step #17 Orange-Pecan-Topped Cream Cheese-Banana-Nut Bread: Prepare bread batter as directed, & spoon into desired pans.
Step #18 Sprinkle top 1 c coarsely sliced, toasted pecans evenly over batter in pans.
Step #19 Bake as directed.
Step #20 Cool bread or muffins in pans 10 mins; remove this from pans to wire racks.
Step #21 Stir together 1 c powdered sugar, 3 tbsps fresh orange juice, & 1 tsp grated orange rind until mixed.
Step #22 Drizzle evenly over warm bread or muffins, & cool 30 mins on wire racks.
Step #23 Toasted Coconut-Topped Cream Cheese-Banana-Nut Bread: Prepare & bake bread or muffins in desired pans.
Step #24 While bread is baking, 1/4 c firmly packed brown sugar, & 1/4 c milk in a small saucepan over medium-high heat; bring to a boil, stir this together 1/4 c butter, 1/4 c granulated sugar, stirring constantly.
Step #25 Remove from heat.
Step #26 Stir in 1 c sweetened flaked coconut; 1 c sliced, toasted pecans; & 2 tsps vanilla extract.
Step #27 Remove baked bread or muffins from oven, & as soon as possible spread tops with coconut mixture.
Step #28 Broil 5 1/2 inches from heat 2 to 3 mins or just until topping starts to lightly brown.
Step #29 Cool in pans on wire racks 20 mins.
Step #30 Remove from pans, & cool 30 mins on wire racks before slicing.

Step #37 Cut in 1/4 c butter & 3 tbsps creamy peanut butter with a pastry mixer or fork until mixture resembles small peas.
Step #38 Sprinkle top mixture evenly over batter in pans.
