Farmer John's Favorite Pumpkin Bread Recipe

Ingredients
  • 3/4 tsp ground cloves
  • 2 c all-purpose flour
  • 1 1/4 tsps ground nutmeg
  • 1 1/2 tsps ground cinnamon
  • 1 1/2 tsps baking soda
  • 3/4 tsp salt
  • 1/2 c raisins
  • 1 c granulated sugar
  • 1 c coarsely sliced walnuts or pecans
  • 3 large eggs
  • 1 3/4 c Mashed Pumpkin
  • 3/4 c vegetable oil
  • 1/2 tsp ground ginger
  • 1 1/4 c firmly packed dark brown sugar
  • 1/2 tsp ground allspice

Directions
  • Step #1 Preheat oven to 350° (325° convection).
  • Step #2 In a large bowl, nutmeg, nuts, mix flour, allspice, raisins, granulated sugar, salt, cloves, baking soda, brown sugar, cinnamon, & ginger until well mixed.
  • Step #3 In another bowl, whisk together eggs, Mashed Pumpkin, & oil until well mixed.
  • Step #4 Add wet ingredients to flour mixture & stir just until well mixed.
  • Step #5 Pour equally into two oiled 8 1/2- by 4 1/2-inch loaf pans (with 2 2/3-c capacity each).
  • Step #6 Bake until bread pulls from pan sides & a wooden skewer inserted in center of thickest part comes out clean, 50 to 60 mins.
  • Step #7 Let bread cool in pans on a rack for about 15 mins.
  • Step #8 Cut around outside edges of bread & invert onto racks.
  • Step #9 Cool thoroughly.
