Cranberry-orange Tea Cake Recipe

Ingredients
  • 3/4 c granulated sugar
  • 2/3 c sweetened dried cranberries, coarsely sliced
  • 1/2 c powdered sugar
  • 1 tbsp grated orange rind
  • 1 tbsp orange juice
  •  Cooking spray
  • 2 tbsps butter, melted
  • 1/4 tsp salt
  • 3/4 c whole-wheat flour
  • 1 c all-purpose flour
  • 1 large egg
  • 3/4 c 1% low-fat milk
  • 1 1/2 tsps baking powder

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flours into dry measuring c, & level with a knife.
  • Step #3 Combine flours & the next 4 ingredients (flours through salt) In a large-ish bowl, & make a well in center of mixture.
  • Step #4 Combine milk, & egg; add to flour mixture, butter, rind, stirring just until moist.
  • Step #5 Spoon batter into an 8 x 4-inch loaf pan coated with cooking spray.
  • Step #6 Bake at 350° for 45 mins or until a wooden pick inserted in center comes out clean.
  • Step #7 Cool 5 mins in pan on a wire rack, & remove this from pan.
  • Step #8 Cool completely on wire rack.
  • Step #9 Combine the powdered sugar & orange juice; drizzle over bread.
