Creamy Cheese Grits Recipe

Ingredients
  • 1 tsp salt
  • 1/2 c half-and-half
  • 1 tbsp butter
  • 1 1/4 c uncooked quick-cooking grits*
  • 5 c water
  • 1/2 (8-oz) block sharp Cheddar cheese, shredded (about 1 c)
  • 1/2 (8-oz) block Monterey Jack cheese, shredded (about 1 c)
  • 1/4 tsp pepper

Directions
  • Step #1 Bring 5 c water & salt to a boil in a medium saucepan over medium-high heat.
  • Step #2 Gradually whisk in grits; bring to a boil.
  • Step #3 Reduce heat to medium-low, stirring every once in awhile, & let simmer, 10 mins or until thickened.
  • Step #4 Stir in Cheddar cheese & remaining ingredients until cheese is melted & mixture is mixed.
  • Step #5 Serve as soon as possible.
  • Step #6 *Stone-ground grits may be substituted.
  • Step #7 Increase liquid to 6 c, & increase cook time to 50 mins.
  • Step #8 Note: For testing purposes only, we used White Lily Quick Grits.
