Mexican Cheese Grits Recipe

Ingredients
  • 2 garlic cloves, pressed
  • 1 small onion, sliced
  • 1 small red bell pepper, sliced
  • 1 c uncooked regular grits
  • 1/2 c milk
  • 1 (4.5-oz) can sliced green chiles, drained
  • 2 large eggs
  • 1 (12-oz) package shredded Cheddar cheese, divided
  • 1/4 tsp ground red pepper
  • 2 tbsps butter or margarine
  • 1 (8-oz) loaf pasteurized prepared cheese product

Directions
  • Step #1 Cook grits according to package directions.
  • Step #2 Stir in cheese product until melted.
  • Step #3 Stir together milk & eggs; stir in theto grits mixture.
  • Step #4 Melt butter In a large-ish skillet over med-heat/flame; add onion & next 3 ingredients, & sauté until tender.
  • Step #5 Stir onion mixture, 1 c shredded cheese, & ground red pepper into grits mixture.
  • Step #6 Pour into a lightly greased 13- x 9-inch baking dish.
  • Step #7 Bake at 350° for 30 mins; sprinkle with remaining 1 1/2 c shredded cheese, & bake 5 to 10 more mins or until cheese melts.
  • Step #8 Note: For testing purposes only, we used Velveeta Pasteurized Prepared Cheese Product.
